Homemade Graham Crackers


In the bowl of electric mixer with paddle attachment, mix together flour, brown sugar, baking soda, teaspoon cinnamon, and salt until well combined.
Add cold butter and mix on low until completely incorporated and coarse crumbs form.
In a small bowl, mix together honey, milk, and vanilla.
Pour milk mixture into flour mixture, and mix on low until dough forms a ball.
Place dough on piece of plastic wrap that has been sprinkled with flour.
Press dough into rectangle and wrap with plastic wrap. Chill in refrigerator for 2 hours.
Preheat oven to 350°F. Line cookie sheet with parchment paper.
In a small bowl, combine remaining 3 tablespoons sugar and 1 teaspoon cinnamon. Set aside.
Remove chilled dough from the refrigerator and place on floured surface. Roll dough out to 1/8-inch thick rectangle.
Using a sharp knife or cookie cutter, cut dough into 2x3-inch rectangles (or cookie dough shape) and place on prepared baking sheet.
Sprinkle with cinnamon/sugar. Bake for 15 minutes (or 20 if you like crispier crackers).
Cool on wire racks. Store in airtight container.
