Snickerdoodles


Preheat oven to 350°F. Line baking sheets with parchment paper.
In the bowl of a stand mixer with paddle attached, cream together butter and 3/4 cup sugar. Add egg and mix well.
In a medium mixing bowl, whisk together flour, cream of tartar, baking soda, and salt until well combined. Add flour mixture to butter mixture and beat until batter forms.
In a small bowl, combine 1 tablespoon sugar and cinnamon. Using a medium scoop, scoop cookie dough and drop into cinnamon/sugar. Roll into balls. Place cookie dough on prepared baking sheets and bake in preheated oven for 11-13 minutes or until cookies are lightly browned and crinkled. Do not overbake.
