Oatmeal Raisin Cookies

Ingredients:
 ½ cup unsalted butter, softened
  cup light brown sugar
 1 egg
 ½ tsp vanilla bean paste
 ¾ cup unbleached all-purpose flour
 ½ tsp baking soda
 ½ tsp ground cinnamon
 ¼ tsp salt
 1 ½ cups oats
 ¾ cup raisins

Preheat oven to 350°F. Line baking sheets with parchment paper.

In a mixing bowl, cream together the butter and brown sugar until fluffy.

Add egg and vanilla until smooth.

Mix in flour, baking soda, cinnamon and salt until well combined. Stir in the oats and raisins.

Using a medium cookie scoop, scoop cookies 2-inches apart onto parchment lined baking sheets.

Bake cookies for 10 to 12 minutes or until edges start to turn golden. Remove from the oven and cool on wire racks.
