Lemon & Black Cherry Ice Cream Sandwiches


Preheat oven to 350°F. Line baking sheets with parchment paper.
In a mixing bowl, combine cake mix, pudding mix, whipped topping, and egg until smooth and sticky.
Place powdered sugar in a medium bowl. Drop dough by rounded spoonfuls (I use a cookie scoop) into powdered sugar and coat completely.
Place cookie dough onto prepared baking sheets and bake for 10-12 minutes. Cool on wire racks.
Place a baking sheet lined with parchment in the freezer while cookies are cooling.
After cookies are completely cooled, scoop ice cream into center of one cookie and place another cookie on top. Sandwich them together. Repeat with remaining cookies. Place sandwiches on baking sheet and freeze for 1 hour.
Remove from freezer and enjoy immediately.
