Easter Egg Nests

Ingredients
 1 cup semi-sweet chocolate chips
 1 tsp vegetable shortening
 2 cups chow mein noodles
 ½ cup shredded coconut
 2 drops green food coloring
 18 chocolate candy-coated mini eggs

Line baking sheet with waxed paper.

In a microwave-safe bowl, combine chocolate chips and shortening. Microwave at 50% power for 1 minute. Stir chocolate. Heat at 30-second intervals on 50% power, stirring after each interval, until chocolate is melted and smooth.

Add chow mein noodles, one cup at a time, until completely coated with chocolate. Form 6 nests on waxed paper. Place pan in freezer for 15 minutes.

In a small plastic bag, mix coconut and food coloring until coconut turns green.

After removing nests from freezer, top each nest with coconut and 3 mini eggs.
