Blueberry Muffins

Ingredients:
 1 ½ cups unbleached all-purpose flour
 ¾ cup granulated sugar, plus extra for sprinkling
 ½ tsp salt
 2 tsp baking powder
  cup vegetable oil
 1 egg
  cup milk
 1 cup blueberries
Directions:

Preheat oven to 400°F. Line 12-cup muffin pan with paper liners.

Whisk together flour, sugar, salt, and baking powder.

Add vegetable oil, egg, and milk. Mix well.

Fold blueberries into the batter.

With a large cookie scoop, fill each muffin cup. Sprinkle granulated sugar over each muffin.

Bake in preheated oven for 25-28 minutes or until cake tester inserted in center comes out clean.

After removing from oven, transfer muffins to a baking rack to cool.

Store in an airtight container.
