Baked Oatmeal
Preheat oven to 350°F.
In a large bowl, combine oats, brown sugar, cinnamon, baking powder, and salt. Mix well.
In a 1-cup liquid measuring cup, beat egg, milk, and vanilla.
Pour milk mixture into oat mixture. Stir until well combined. If you are adding optional chopped fruit, chocolate chips, or nuts, fold these in now.
Spread mixture into 8-inch square baking pan. Bake for 20-25 minutes or until top is golden brown.
