Apple Cinnamon Oatmeal Cookies

Ingredients:
 1 cup unsalted butter, room temperature
 1 (8 oz) package cream cheese, room temperature
 ¾ cup granulated sugar
 ¾ cup brown sugar
 2 tsp vanilla extract
 2 ¼ cups unbleached all-purpose flour
 1 tsp ground cinnamon
 1 tsp baking soda
 ½ tsp salt
 1 ¼ cups oats
 2 small apples (peeled, cored, & chopped into small pieces)
Directions:

Preheat oven to 375°F. Line baking sheets with parchment paper.

In a large mixing bowl, cream together butter, cream cheese, and sugars. Add vanilla. Mix well.

Add flour, cinnamon, baking soda, and salt until well combined.

Mix in oats and apples.

Use medium scoop (approximately 2 tablespoons) to place cookie dough 2-inches apart on baking sheets.

Bake for 12-14 minutes or until golden. Cool on wire racks.

These cookies are best the day you bake them. They can be frozen in freezer-safe bags and pulled out the night before for a delicious breakfast treat.
