Apple Cheesecake Bars


Preheat oven to 350°F.
In a food processor or the bowl of a stand mixer with paddle attachment, place butter, flour, brown sugar, cinnamon, and oats. Pulse or mix until dough forms.
Press dough into bottom of 9x9-inch square baking pan. Bake for 10-12 minutes until lightly browned.
Remove from oven and set aside.
In the bowl of a stand mixer, beat powdered sugar, cream cheese, and vanilla until well combined.
Spread evenly over slightly cooled crust.
In a large bowl, mix together apples, sugar, cinnamon, and nutmeg until well combined.
Spread apples over cream cheese.
Combine flour, oats, and brown sugar in a large bowl. With a pastry knife or fork, cut in butter until coarse crumbs form.
Sprinkle topping over apple layer.
Bake for 25-30 minutes or until top is golden and center is set. Remove from oven and cool before slicing. Store in refrigerator.
