Apple Butterscotch Mini Loaves

These small apple loaves are the perfect size for sharing with friends and neighbors.

Yields1 Serving

Ingredients
 1 ½ cups sugar
 ¾ cup unsalted butter, softened
 3 eggs
 1 tsp vanilla extract
 2 ¼ cups all purpose flour
 2 tsp baking powder
 1 tsp baking soda
 1 tsp salt
 1 tsp cinnamon
 4 medium apples, peeled, cored, and chopped
 5 oz butterscotch morsels

Preheat oven to 350 degrees. Lightly grease 4 mini loaf pans.

In a large bowl, cream butter and sugar. Add eggs and vanilla until well combined. Mix in flour, baking powder, baking soda, salt, and cinnamon. Fold in apples. Pour batter evenly into mini loaf pans. Sprinkle each loaf with butterscotch chips and press down slightly.

Bake for 45 minutes or until toothpick inserted in center comes out clean. Cool completely before slicing.
