Ingredients
  

Ingredients:
  • 9 cup Rice Chex or any combination of Chex cereal
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup almond butter (peanut-free like Barney Butter)
  • 1/4 cup unsalted butter
  • 1 tsp vanilla extract
  • 1 1/2 cup powdered sugar

Method
 

Directions:
  1. In a medium microwave-safe bowl, melt chocolate chips, almond butter, and butter for 1 minute. Stir. Continue to heat at 30-second intervals until mixture is melted and smooth.
  2. After removing chocolate from microwave, stir in vanilla.
  3. In a large mixing bowl, add Chex cereal. Pour melted chocolate mixture over cereal and stir until coated.
  4. Sprinkle powdered sugar over chocolate coated cereal and mix well until cereal has been coated with powdered sugar. (You can also place cereal and powdered sugar in a large ziplock bag and shake to coat.)
  5. Spread cereal out over parchment lined pan and cool completely. Store in air-tight container.
